      Vinification:

      Each bunch is selected and then goes through whirlpool-like wash, followed by thorough drying. Then they are destemmed in the maceration vat. Skin contact lasted from 20 to 22 days. Alcoholic fermentation and maceration were controlled by accurately managing temperature. The mass was mixed daily, using a pair of flying tanks. The wine is finally drawn off and was placed in small oak barrels.
