      Vinification:

      Each bunch is selected and then goes through whirlpool-like wash, followed by thorough drying. Then they are destemmed in the maceration vat. About ¼ of juice is aged in small oak barrels, the remaining must is fermented in steel vats.

      Ageing:

      8 months of aging on the lees, without malolactic fermentation. Bottle ageing for 5 months.
